Green Eggs (No Ham)

The simplest meals always tend to become the most satisfying, enter my Avocado + Egg Open-Faced Sandwich. This is one of my favorite meals to prepare. With just four ingredients, five if you count the optional slice of lemon, a satisfying and healthy meal is ready in less than ten minutes. Avocados get a bad rap for being high in “fat,” but they’re the good guys I promise. The fat found in this superfood hold almost 20 essential nutrients and heart-healthy fats, that’s a lot of health benefits right here! Fifteen-minute preparation time with minimal clean-up, those are my kind of meals! And no, I’m not talking about SpaghettiO’s. I’ve found that what’s been great about my resolution to add more whole foods to my diet, meaning anything unprocessed or foods that are refined as little as possible, is that foods in their raw state already comes prepared for you to eat! Only the basic motions of washing, peeling, and chopping needed. What I like to do is spend one day, preferably right when I get back from the grocery store so it’s more efficient, preparing for that week’s worth of veggies/fruits. I found that by storing them in glass containers, not only do they look more appealing (I love seeing the trio of red, yellow, and green bell peppers) but it makes cooking more enjoyable! Imagine the possibility of  simply opening the fridge and adding those pre-diced onions from Sunday to your Wednesday pasta dish – you get the picture.

So now onto my Green Eggs (No Ham) Sandwich:

Ingredients Needed:

1 Medium-Sized Avocado
1 Whole Wheat Pita (I recommend Toufayan’s – I pick mine up at Sprout’s)
1 Egg
Coarsely Ground Black Pepper
Slice of Lemon (Optional)


  1. Toast your pita bread to your desired level of preference.
  2. Cut the avocado into cubes and spread it over the pita while it’s still warm.
  3. Poach your egg while your bread is toasting.
    It’s easier to crack the egg into a small dish before pouring it into your water. You want your water to be simmering aka right before it boils. Create a small whirlpool around the egg to help the egg white to wrap around the yolk and allow it to stay together. In a couple minutes you can take it out with a perforated spoon and voila! For those of you that still find this task to be quite daunting, here’s a great how-to if you’re still nervous. But I personally find that I don’t need to add the vinegar or use any fancy gadgets. The key is just making sure that you get the water right before it boils and just be gentle. You can do it! 
  4. Gently layer your successfully poached egg over your avocado.
  5. Grind some pepper & squeeze that lemon.
  6. Break the yolk, we’re celebrating because it’s time to eat!

DISCLAIMER: This meal can get messy. I personally like eating this sandwich “pizza-style” and spreading the yolky goodness around. But if you’re bringing this meal to work, you can always just stuff the pita instead of laying it on top.
