Super Bowl of Spinach Salad

For Superbowl Sunday, I made a delicious Spinach Salad with Japanese Ginger Dressing. The recipe is from Web MD with slight modifications.

Spinach Salad with Japanese Ginger Dressing

What I love about this salad dressing is that it is super quick and easy to whip up, and it tastes just like the ones from Japanese restaurants. The dressing itself is extremely flavorful, especially from the onion, ginger, and garlic. At the same time, it tastes really light and guilt-free.

Super Bowl of Spinach Salad for the Superbowl

Difficulty Level:

Dressing Ingredients:
3 tablespoons minced onion
3 tablespoons canola oil
2 tablespoons white vinegar
1 ½ tablespoons grated ginger
1 tablespoon ketchup
1 tablespoon soy sauce
1/4 teaspoon minced garlic
1/4 teaspoon salt
Ground pepper, to taste

Salad Ingredients:
10 ounces fresh spinach
1 large carrot, very thinly sliced
1 medium red bell pepper, very thinly sliced
1 medium green bell pepper, very thinly sliced

Instructions:
1. Combine onion, oil, vinegar, ginger, ketchup, soy sauce, garlic, salt and pepper in a blender. Process until combined.
2. Toss spinach, carrot, and bell peppers  with the dressing in a large bowl until evenly coated.

Oh, and one last thing to note when it comes to this recipe is that less is more.
