Me oh my! I’ve been on quite the baking spree lately – so much so that I’m convinced Martha Stewart, America’s Homemaking Queen, would be proud! Allow me to elaborate… In the past few weeks, I’ve been keen on testing out a new oven and trying to figure the in’s and out’s of it before I attempt more advanced feats (ahem, soufflés and macarons). After many, many rounds of trial and error with my unsuspecting test subjects, I managed to concoct a Flourless Oatmeal Chocolate Chip & Walnut Cookies Recipe!
This recipe actually came about from an act of serendipity. Because I had just moved, I could not for the life of me figure out which box I had packed the flour in! By happenstance, I did have half a bag of almond meal in my fridge. Go figure, right? Almond meal is derived from ground blanched almonds. In baking, almond meal is often used as an alternative to wheat flour. Since the only ingredients in almond meal are whole, skinned almonds, it is low in carbohydrates and high in fiber and protein. In addition, almond meal is rich in vitamins and minerals that provide calcium; increase energy; lower cholesterol; and prevent cell damage, heart disease, and stroke. I use Bob’s Red Mill Almond Meal/Flour, available at your local organic supermarket, but at a cheaper price you can also purchase it from Honeyville, an online specialty baking store, in bulk.
To make this recipe très healthy, I substituted almond meal for flour, and banana for butter. It adds a rich, nutty flavor to the cookies and a hint of banana. In addition, I decreased the sugar content significantly (by a whopping 10 tablespoons!), as well as the chocolate chips. I also intensified the oats and took the liberty of adding flax and chia seeds. The result? A decadent yet sinless and oh-so compact ball of delicious goodness! It’s sweet enough to fulfill all your sweet tooth cravings, substantial enough to fill you up, and hearty enough to provide a morning’s worth of energy. Without further ado, I present to you my:
Flourless Oatmeal Chocolate Chip & Walnut Cookies Recipe
Yields: 24 cookies | Prep Time: 8 minutes | Cooking Time: 12 minutes | Total Time: 20 minutes
1 cup almond meal
½ teaspoon baking soda
¾ teaspoon sea salt
2 tablespoons ground flax seed
2 tablespoons brown chia seeds
1 ripe banana
1 tablespoon granulated sugar
1 tablespoon light brown sugar
1 large egg
1 teaspoon pure vanilla extract
½ teaspoon water
1 ¼ cup rolled oats
½ cup semisweet chocolate chips
½ cup raw walnuts
1. Preheat the oven to 375° F.
2. Line 2 baking sheets with aluminum foil.
3. In one bowl, whisk together the flour, baking soda, salt, flax seed, and chia seed.
4. In another bowl, beat together banana, sugars, egg, vanilla, and water.
5. Add to flour mixture and stir to combine.
6. Stir in the oats, chocolate chips, and walnuts.
7. Drop by teaspoonfuls onto baking sheets, spacing the dough 1 inch apart.
8. Bake for 12 minutes, until lightly golden in color.
9. Remove to racks and let cool.
